The ambiance was spectacular, and the food blew our minds. We started with birria tacos with the classic consomé. Next, we had empanadas topped with pepitas (pumpkin seeds) and a vibrant salsa verde. The combination of the crispy shell, nutty seeds, and fresh salsa creates a familiar and uniquely local dish.
We also had a taste of the flautas. These come with a full platter experience, including red sauce, crema, and black beans, each element contributing to a rich, layered mouthfeel.
The journey continued with a dish called Cazuela, featuring a beautifully cooked piece of sea bass in a green mole. This mole verde is a revelation, combining citrusy, salty flavors with the aromatic notes of roasted poblano peppers, creating an aromatic, non-spicy dish that delights the senses.
Next up were braised short ribs in a dark, chocolatey mole. This dish showcased the complex layering of flavors that mole is known for – earthy, chocolatey depths mixed with fruity and chili notes, all wrapping around the tender rib.
Our final dish was a hearty risotto served in a Spanish paella pan, highlighting unique and classic Latin flavors. Ondas by Fuego is certified kosher by the Vaad Hakashrus of Five Towns and Far Rockaway.
